Vanilla & Oolong Tea Lime Marshmallow

  • Les vergers Boiron Lime Puree - 25 g
  • Albumina powder (egg white powder) - 18 g
  • Granulated sugar - 505 g
  • Tea water - 177 g
  • Glucose syrup - 101 g
  • Tea water - 177 g
  • Gelatin sheet - 28 g
  • Food coloring - QS

(Total weight: 1,031g)

Mix the lime puree with the egg white powder.
Heat up sugar, glucose and tea water to 130°C.
Add gelatin in the syrup and mix with egg white powder until nicely whipped.
Spread inside the form.
After 1 day, cut in square pieces.
